Love, love, LOVE the rainbow pancakes!! I first saw them here, and set to work immediately whipping them up. Now, mine didn't come out quite as vibrant as Amanda's, because using large quantities of food coloring scares me (this is also why I have yet to attempt red velvet cake), but they still make an impact.
I made tiny silver-dollar pancakes for the kids, so they could have one of each and still eat them all. (We served them with peaches and scrambled eggs.)
The kids had fun eating them...I had fun photographing them. :)
