This is what I'll be making for Thanksgiving. Pecan Pie Cake. Thank you, Cake Mix Doctor, for having such yummy and easy recipes.
I'm also making pumpkin pie and this chocolate cake with peppermint frosting. We don't usually have chocolate on the Thanksgiving table, but a friend gave me some leftover peppermint frosting that needs chocolate cake. The frosting is currently in the freezer. I read that you can freeze frosting, but this is the first time I'm trying it. If it works, it might just revolutionize my baking world.

Here are some tried-and-true suggestions from the archives, if you're scrambling to come up with something great:
- Pumpkin Caramel Cheesecake with Gingersnap Crust
- Gluten-free Applesauce Cake (you can use a regular cake mix if you don't have gluten issues) This is especially wonderful when topped with cinnamon whipped cream.
- Gluten-free Spiked Chunky Apple Cake with Brown Sugar Brandy Sauce (same deal here--you can substitute with regular cake mix) Yes, this is as delicious and as decadent as it sounds.
- Root Beer Cookies do not have a traditional Thanksgiving flavor, but they're brown, and will compliment the other colors on the table nicely.
- Oatmeal Raisin Cookies make everyone feel warm and cozy...and thankful. Don't forget my cookie trick if the kids are helping you bake!
I'm watching the snow fall and making my last grocery list before Turkey Day. I'm also paying extra attention to things I'm thankful for right now. I hope to be back in a day or two to share some of those things with you.
