Another Pinterest find here—a knockoff recipe of Whole Food's Detox Salad by Angela from Oh She Glows. Broccoli, cauliflower, carrots, raisins, currants, sunflower seeds, parsley, lemon juice, and a touch of maple syrup. Pretty delicious, even more so because it makes you feel healthy when you eat it. I'm not sure of its actual detoxification qualities, except for a pretty large amount of fiber. But that was ok by me. I made this the day after we had fried chicken, so I needed to eat something healthy for a while to alleviate my unhealthy food guilt.
The recipe is great as is. But the currants I found tasted exactly like raisins, and I'm not a big raisin fan anyway, so I'd probably use less of the dried fruit next time. Raw kale would be a good addition. Substitute cilantro, lime and black beans for the parsley, lemon and dried fruit to give it a southwest/Mex kick. And the quinoa that I added to make a complete lunch was excellent.
Head over to Oh She Glows for the recipe, and let me know if you come up with any tasty variations!
