Summer has finally arrived here in the Pacific Northwest.
Time to turn off the ovens and have salad for dinner.
This is a great one that celebrates the bounty of fresh summertime fruit.
Serve it next to a grilled hamburger.
Top it with leftover grilled chicken.
Stir in some pecans and sunflower seeds, or tiny chunks of firm tofu.
Strawberry Mango Salad with Honey Lime Dressing
(inspired by this Cheeky Kitchen recipe)
1/2 cup plain yogurt (can substitute mayonnaise, if you prefer)
1/4 cup honey
1 tablespoon lime juice
1 tablespoon olive oil (omit if using mayonnaise)
1/8 teaspoon ground black pepper
4-6 cups torn/cut romaine lettuce (one bag of pre-cut lettuce works, too)
10-15 strawberries
1 ripe mango

- Combine dressing ingredients (first five above) in salad bowl with a whisk.
- Add lettuce and toss.
- Slice strawberries and mango into bite-sized pieces.
- Add to lettuce and gently toss to combine.
- Serve and enjoy!
